Vegan Gluten Free Meatless Balls!

I found this totally delicious pasta from good ole Woollies. Yes it's vegan and it's gluten free plus organic. It is the best! #Woolworths

Super delicious Gluten Free Pasta from Woollies!

Here is what you need guys to make this vegan spaghetti meat-less balls dish.

  • Olive oil, 3 tablespoons

  • Onion 1/2 , thinly diced

  • Garlic, 2-3 cloves or teaspoon of minced garlic from jar

  • Tomatoes x 4-6 chopped

  • Meatless Meatballs (from Aldi. Many other brands also exist).

  • Tin of tomatoes (400ml), crushed.

  • Spaghetti - 350grams or so

  • Basil small bunch of leaves- fresh is more aromatic, but if you don't have fresh, just use 1/4 teaspoon of dry basil leaves.

* Optional Nutritional Yeast - 1 tablespoon or so to give a cheezy like taste

*Optional Kale. I just threw this in as it was in my fridge. Can never go wrong with getting some extra leafy greens in!

Utensils, frying pan, pot, wooden spoon and tongs.


Putting it all together!

Firstly, boil a pot of water and pop in your spaghetti.

* Fresh Kale option if you are using fresh kale, I cook this first in a tablespoon of olive oil and use a bit of quality salt like rock salt or sea salt. Cook the kale until it has a slight crisp and put it aside. Make sure you just cook the leaves and not the stalks - stalks are tough.

  • Add 2 tablespoons of olive oil to the pan on a medium heat.

  • Add the onion and lightly fry until translucent.

  • Add the garlic and heat for 1 minute or so, but do not brown.

  • Add the meatless meat balls. I often cut them in half as they're cooking as they are quite large.

  • Cook the meat-less balls for a few minutes until they start to get a bit of crispiness to the outside and brown.

  • Add the chopped tomatoes, tin of tomatoes and dry basil (if you don't have fresh). Heat to a light simmer for a 4-5 minutes to get all the flavours through.

* If using Nutritional Yeast, add a tablespoon or so and mix through.

*If using the kale, add the already cooked kale to the sauce mixture.


Serving

Drain the spaghetti.

Serve it in a bowl/plate using some tongs. Tongs are handy for serving spaghetti as you can easily grab the pasta, and twirl it into a nice high pile.


Add the sauce mixture and garnish with fresh basil leaves.


Voila!
