Vegan halloumi tomato bake

I was so excited when I spotted a vegan halloumi in the supermarket. This recipe is an adaption of a real halloumi tomato bake recipe. I have added some extra pizazz so it has more chunky flavours and replaces the regular halloumi with a vegan Halloumi. I used the Biolife Halloumi which you can buy from major supermarkets. It’s not only vegan it is also gluten free! The recipe relatively quick and easy recipe. Once you have gathered your ingredients it will take around 10 minutes easy preparation and 20 minutes baking time. Serves 4 hungry people. What you’ll need Cookware Baking dish medium size Saucepan medium size The base Olive oil – 2 tablespoons Garlic – 2 cloves or 1 teaspoon of minced garlic Red Onion – finely chopped Herbs & salt Salt (rock or sea salt) – ¼ teaspoon Oregano – 1 teaspoon Paprika – ½ teaspoon Sweeteners Red wine vinegar – ½ teaspoon Molasses or maple syrup – 2 teaspoons Bulk of mix Tin of white beans like cannellini or butter beans Stock powder (vegan) + 2 cups of water. Stir together to create the stock.

Spinach (optional) - I use 4 Farms Bell spinach cubes or just through in a handful of spinach. Quinoa – 1 cup (rinse the Quinoa well, this will remove any bitterness) Hero Vegan Halloumi – cut into slices. Putting it all together The Base In a saucepan heat the olive oil then add the onion. Lightly fry then add the garlic. Followed by all the Herbs and Salt. Add the sweeteners (red wine vinegar and maple syrup.

Stir for a minute or two. Add the “Bulk of Mix’ to the pot including the stock , spinach and quinoa. Stir through. Now pour the mixture into the baking dish. Add the sliced halloumi to the top. I also added a squeeze of lemon juice to the halloumi. Put your dish into the oven at about 180 degrees fan forced or 200 degrees conventional Allow about 20 minutes to bake. Your bake will be ready once the quinoa is nice and soft and the halloumi is lightly golden.
